Crazy ‘Bout Crawfish

Some things never change. Crawfish, for example. Some folks love eating these little crustaceans. Others can’t bring themselves to taste something that
so closely resembles a bug. It’s been that way for centuries.
Frederick Gerstaecker, a German adventurer, arrived in Arkansas in 1837 for a five-year visit. In the book he wrote about his travels, Wild Sports in the Far
West, he describes catching and cooking crawfish on the bank of an Arkansas river. “The meal itself was no slight treat,” he wrote, “but our enjoyment was
much heightened by watching the countenances of the Americans, expressive half of merriment, half of disgust, for they had never dreamt that people could
eat such nasty animals with such zeal.”
Today, many Arkansans still believe crawfish are good for nothing but fish bait. Others know better; they’ve discovered that crawfish are lip-
smacking good and can be prepared in scores of delicious recipes. As a friend of mine says: “If you use crawfish for fish bait, you’re feeding the bait to
the wrong party.”
For you adventurous gourmets, here are some recipes to try.
Crawfish Pasta
1 pound pasta (your favorite kind)
1 stick butter
3/4 cup chopped green onion
1 pound peeled crawfish tails, pre-cooked
1 tablespoon Cajun seasoning
1 pint half & half or light cream
Precook the pasta. Mix the remaining ingredients in a
saucepan and heat until thickened, about 10 minutes.
Serve the sauce over the pasta.
Crawfish Chili
2 pounds lean ground beef
1 teaspoon minced garlic
1 tablespoon soy sauce
3 tablespoons chili powder
1 cup dry white wine
1 teaspoon lime juice
2 pounds peeled crawfish tails
2 teaspoons salt
1 teaspoon cayenne
1 tablespoon dried parsley
1 (8-ounce) can tomato sauce
1 cup water
1 cup chopped onions
Brown the meat in a skillet. Combine the remaining
ingredients with the meat in a large pot, and bring to
a boil. Reduce heat, and simmer, covered, for one to
two hours.
Crawfish Chicot
1 large white onion, finely chopped
2 celery stalks, finely chopped
1/2 pound butter
2 pounds peeled crawfish tails
4 tablespoons flour
1 large plus 1 small can evaporated milk
2 egg yolks
salt and cayenne pepper to taste
Sauté the onions and celery in butter until soft. Add
the crawfish tails and cook for 10 minutes uncovered
and 10 minutes covered. Remove the crawfish tails and
reserve. Add flour to the butter mixture and blend.
Add milk and blend. Remove from heat and add egg
yolks and blend. Add crawfish, salt and red pepper.
Pour in a large casserole dish, and bake at 350
degrees for 30 minutes uncovered.
Crawfish Creole
2 pounds peeled crawfish tails
1-1/2 cups tomato sauce
1 (6 ounce) can tomato paste
1 can diced tomatoes/green chilies
1 medium onion, chopped
1 medium bell pepper, chopped
2 tablespoon minced garlic
1 tablespoon Cajun seasoning
Cooked rice
Combine all ingredients except crawfish and simmer
until vegetables are tender. Add crawfish and simmer
15 minutes. Serve over cooked white rice.
Angler snags new state record black buffalo
LITTLE ROCK – You could tell from the
lightweight fishing equipment he was using that Kenny
DeLuca of Paron wasn’t expecting to catch a big one
when he went white bass fishing on Lake Maumelle
Saturday, Feb. 24.
But that’s what happened. It was a black buffalo,
though, not a white bass, and the fish later pulled
the certified scales at Wood’s Feed Store in Cabot to
92 pounds, 8 ounces, nearly double the former state
record of 54 pounds, 11 ounces. The former record was
also taken from Lake Maumelle, in November 1998.
DeLuca was using standard white bass tackle with 15-
lb. test line when he spotted the large buffalo in
shallow water. Rigging a treble hook and bell sinker,
he started casting across the fish. After several
tries, he snagged it. More than 30 minutes later, he
finally boated the fish.
“Snagging is legal for rough fish, so this catch is a
legitimate new record for conventional tackle,” said
Keith Sutton, official fish records keeper for the
Arkansas Game & Fish Commission. Sutton said the
unrestricted tackle state record for black buffalo,
taken by bow and arrow from Harris Brake Lake in 1994,
weighed 105 pounds.
Turkey Expo 2001 draws near
LITTLE ROCK – Late winter is when turkey
hunters – and their families – go gently crazy. The
hunters are driven in that direction by the snail-slow
pace at which the approaching turkey season is
coming. The families are driven in that direction by
the hunters themselves, who are watching turkey
videos, practicing their calling, digging out mounds
of camo clothing, jittering around the house and
otherwise making nuisances of themselves.
But for one weekend, at least, those families can
either get rid of their nervous, anxious hunters. Or,
better yet, they can find out for themselves just what
this whole turkey hunting thing is all about. On
March 16-18, the Arkansas State Chapter of the
National Wild Turkey Federation is sponsoring Turkey
Expo 2001 at the Little Rock Expo Center off I-30 near
Alexander.
“Turkey Expo is a weekend-long trade show/calling
contest/banquet/turkey hunting festival, designed by
hunters for hunters,” said Steve “Wildman” Wilson, one
of the coordinators of the event. Wilson said the
hours are 4-8 p.m. March 16, 8 am-5 p.m. March 17, and
10 a.m.-5 p.m. March 18. Admission is $3 per person
for the entire weekend. Kids under 12 get in free.
In addition to seminars and calling demonstrations,
Turkey Expo features the 29th Arkansas State Turkey
Calling Contest, several other calling contests, a
longest turkey beard contest and a turkey taxidermy
display.
The highlight of the Expo is the Arkansas State
Chapter Banquet and Benefit Auction, which begins
March 17 at 6 p.m. Tickets are limited and are
available by calling 501-223-6466.
“Turkey Expo is a good way to get ready for the
coming season,” Wilson said. “It’s one-stop
shopping. You can swap turkey stories with other
hunters, look at and buy new equipment, pick up some
new hunting tips, and help the cause of the wild
turkey in Arkansas and across the nation, all at the
same time.”
Dave Donaldson WMA public meeting scheduled
JONESBORO – Dave Donaldson/Black River
Wildlife Management Area in northeast Arkansas is a
big, remote chunk of state-owned land that
consistently floods every fall. That’s good news for
duck hunters, because the WMA is one of the best duck-
hunting areas in the state.
The downside of the area’s remoteness and predictable
annual flooding is that it makes public access to this
20,000-plus acre area difficult at best. Hunters have
plenty of room to hunt, once they manage to reach the
area, but finding a place to launch a boat and leave a
vehicle and trailer while hunting are serious
problems. Access points are scarce and limited in
space.
To address this issue, the Arkansas Game & Fish
Commission has studied possible ways to improve the
access situation to Dave Donaldson/Black River WMA,
and is hosting a public meeting to solicit suggestions
and comments on the problem. The meeting is at 7 p.m.
Tuesday, March 6 at the Pocahontas Community Center,
on Geneva Street.
“The main problem with access to Dave Donaldson WMA is
the topography of the place,” explained Robert
Zachary, AGFC’s District Wildlife Supervisor in
northeast Arkansas. “It’s a river bottom, and when
it’s flooded for duck hunting, all the access points
at the river are under water. There are very few
places where there’s enough high ground adjacent to
the backwaters to provide good access.”
Zachary said the official meeting will be confined to
a discussion of the access issue, but that he and
other Game & Fish staff members will be on hand to
discuss other issues at the close of the meeting.

Current and approaching seasons in Arkansas:
Coyote: Sept. 2-March 1 and May 15-June 13. No limit.
(Also open during spring turkey season during daylight
hours only, with weapons legal for turkey hunting.)
Furbearers: Raccoon, beaver, nutria and muskrat only -
Nov. 18-March 31.
Crow: Sept. 9-March 1. Open Wednesdays-Sundays only.
No limit.
Fall Turkey: Archery/Crossbow: Oct. 1-Feb. 28. Gun:
Closed. Season limit one.
Deer: Archery/Crossbow: All zones, Oct. 1-Feb. 28.
Season limit four, of which no more than two can be
bucks.
Snow goose special conservation order season:
Feb. 1-April 30. No limit, shotguns may be unplugged,
electronic calls are allowed, shooting hours are 30
minutes before sunrise to 30 minutes after sunset.
Goose hunters are required to have a registration
number, obtainable free of charge from the Arkansas
Game & Fish Commission at 1-800-364-4263.
Spring turkey: March 31-May 6 in spring turkey zone 17
(formerly zone 20); April 2-May 6 in spring turkey
zone 1; April 2- April 15 in spring turkey zone 2;
closed in spring turkey zone 3. Season limit: two
statewide, except only one bird can be taken in spring
turkey zone 2.

Ozarks in Eureka Springs, has been postponed due to a
fire which destroyed the Inn’s conference center ,

The 2001 Arkansas Stream Team Conference, originally
scheduled for March 9-11 at Inn of the Ozarks in
Eureka Springs, has been postponed due to a fire which
destroyed the Inn’s conference center , according to
Steve Filipek, Stream Team Program Coordinator for the
Arkansas Game & Fish Commission. The AGFC Stream Team
staff is rescheduling the event for a later date and
new location. Specifics will be released as soon as
